Fish with coriander pesto
Put 1 bunch roughly chopped coriander and 1 packet
Sunbeam Seed Mix in a food processor. Add
V
2
cup vegetable oil, 2 cloves garlic and 2 Tbsp warm
water, and process until
mixture forms a coarse paste.
Coat strips of flathead fillets
in cornflour and shake off
excess. Set a large heavy-
based frying pan over a high
heat. Pour in enough vegetable
oil in to come halfway up side
of pan. Add fish strips and
cook for 2-3 minutes on each
side or until golden. Drain
on paper towel. Serve fish
with coriander pesto, lemon
wedges and coriander sprigs.
Cheese and thyme muffins
Preheat oven to 200°C. Brush a 12-hole standard
muffin tin with melted butter. Sift 2 cups self-raising
flour into a large mixing bowl. Add 10Og crumbled
feta and 2 Tbsp lemon thyme
leaves, and stir with a fork to
combine. Make a well in centre
of flour mixture, add 1 cup
Praise Honey Dijon dressing
and stir with a fork until just
combined. Spoon mixture
into prepared tin. Sprinkle
each muffin with 1 tsp grated
parmesan cheese and bake for
1 5-20 minutes or until muffins
are cooked when tested with a
skewer, well risen and golden.
Serve warm.

Vanilla and raspberry semifreddo
Line a large loaf tin with baking paper. Put 300ml
thickened cream, 1 tsp vanilla extract and 1 tsp
rosewater essence in a large bowl and whip until soft
peaks form. Add a tub of Betty
Crocker Creamy Deluxe
Vanilla Frosting and fold in
until just combined. Put a layer
of sponge biscuits on base of
prepared tin. Top with half the
cream mixture and sprinkle
with
'/ 2
punnet raspberries. Top
with another layer of sponge
biscuits, sprinkle with
remaining raspberries and
finish with remaining cream
mixture. Cover and freeze for
2
hours for a spoonable
dessert or 1 2 hours for a firm
dessert. To serve, spoon or
slice and serve with extra
raspberries, if desired.

Upside-down pear pudding
Preheat oven to 180“C. Brush a 6-cup pudding basin
with melted butter. Line base with baking paper. Put a

desiccated coconut in a
medium bowl and stir to
combine. Put

cup buttermilk
and 1 egg in a small jug. Whisk
until combined. Make a well in
centre of dry ingredients. Add
milk mixture and stir until just
combined. Spoon mixture into
basin. Sit basin in an ovenproof
dish. Pour in enough hot water
to come halfway up sides of
dish. Cover with foil and bake
for 20-25 minutes. Stand for
5 minutes before turning out
onto a serving plate. Serve.
